Best Ever Gluten Free Cake – Goji Berry Coconut Millet Cake


Feel guilty eating cake or giving the kids cake? Well, you don’t have to with this cake! It’s a gluten free organic millet cake with goji berries and shredded coconut. Yes, you heard it right, it’s made of millet. For those of you who do not know what millets are. They are cereal crops and small-seeded grasses that are popular in Asian and Africa. They are packed with nutrients and have so many health benefits including reduce high blood pressure, prevent Celiac disease, control diabetes, help to treat coronary artery disorders, reduce risk of colon cancer, source of antioxidant and more. It’s great for adults and kids. 

Growing up I only knew that you can use millets to make congee, I never thought about using it to make anything else. Well, last weekend, I discovered a new way to use millets! You can actually use it to make a yummy cake! I made an organic steamed millet cake with goji berries and shredded coconut  and it was absolutely delicious and as satisfying as eating a regular sponge cake. The great thing about this cake is that it is probably one of the healthiest cakes you can ever make so you don’t have to feel guilty eating it or giving too much to the kids! 

INGREDIENTS:

  • 150 g of organic millet
  • 50 g of vegetable oil
  • 4 Eggs
  • 40 g of organic cane sugar (or use whatever sugar you have)
  • Lemon juice from one wedge of lemon
  • 1 TBSP of organic goji berries (this is optional, and amount depends on how much you like)
  • 1 TBSP of organic shredded coconut (this is optional, and amount depends on how much you like)

STEPS:

Millet Mixture:

  1. Soak 150 g of millet in water overnight or at least 3 hours
  2. Drain the millet and pour it into a blender
  3. Separate the egg yolks and egg whites
  4. Add the 4 egg yolks into the blender
  5. Add 50 g of vegetable oil into the blender
  6. Blend everything in the blender until it becomes a creamy yellow mixture 
  7. Pour out the millet mixture into a bowl and add some goji berries and shredded coconut (save some for later too)

The Meringue:

  1. In the bowl with the 4 egg whites, add lemon juice from one wedge of lemon
  2. Add 1/3 of the sugar to the egg whites and start beating with an electric mixer at medium speed until it’s bubbly
  3. Add another 1/3 of sugar and turn the mixer to medium high speed and continue beating until it turns into soft peaks
  4. Add the rest of the sugar and continue beating until egg whites become stiff peaks (this might take a while but you also have to be very careful to watch it so you will not over beat it)

Combining:

  1. Combine 1/3 of the meringue (beaten egg whites) with the millet mixture using a rubber spatula, be very careful to fold it in so you don’t deflate the egg whites
  2. Combine the rest of the meringue in two times, each time being very careful not to deflate it
  3. Grease a cake pan or rice cooker with coconut oil or butter
  4. Carefully pour in the cake mixture into the cake pan or rice cooker
  5. Sprinkle some goji berries and shredded coconut on top of the cake mixture

Steaming:

  1. Cover the cake pan tightly and steam it about 30 minutes
  2. If you are using a rice cooker, then just let it cook in there for about 40 minutes
  3. Turn off the heat and let it sit for a few minutes
  4. Take out the cake and let it cool and you enjoy!
